Being dedicated to presenting the most authentic “Crossing-the-Bridge” Rice Noodles, Yunshang Rice Noodle, since founded in Toronto in 2016, has now expanded to Waterloo, Vancouver, Ottawa, Edmonton, and Winnipeg, with locations across the U.S. on the horizon. This franchise has become the most beloved destination for the local North American Chinese community, serving more than 2,000,000 bowls of Crossing-the-Bridge Rice Noodle annually.


At Yunshang, we carefully select high-quality pork bones, as well as other protein sources like ham, chicken, and beef bones. They undergo a meticulous boiling process for over 12 hours, ensuring the broth is used on the same day and free from MSG or artificial flavors. Each sip of our rich and aromatic bone broth allows you to savor the excellent texture resulting from the extended simmering and refinement of the ingredients. To cater to diverse tastes and preferences, we have infused our traditional original bone broth with unique flavors such as the tangy Sweet and Sour Tomato, the spicy Sichuan-style, and the fragrant Coconut Curry.

Our noodles are handmade using traditional methods, without the addition of gelatin or any artificial ingredients. We have established close partnerships with local farms to handpick fresh vegetables, meats, and other raw materials. Additionally, to recreate the most authentic traditional flavors, we also air-ship select ingredients from Asia.

We offer a diverse and extensive menu that caters to a wide range of tastes and preferences. In addition to our signature rice noodles, we provide a variety of cold dishes, appetizers, and desserts. Our signature cold dishes include the mouth-watering and appetizing Cold Cut Chicken with Chili Sauce, featuring tender and flavorful chicken with a spicy kick. We also offer the refreshing, tangy, and crispy Potato Salad, as well as the highly recommended Beef & Ox Tongue in Chili Sauce, which consists of thinly sliced braised beef served with our homemade sauce. In addition to the cold dishes, we highly recommend trying our specialty appetizers such as Popcorn Chicken, New Orleans Chicken Wings, and Fried Tofu with Garlic Sauce.

Legend of "Crossing-the-Bridge" Rice Noodle

Essential in Chinese cuisine, “Crossing the Bridge” Rice Noodles have over hundred years of history. According to the popular fable, it was invented by the wife of a scholar who had to cross a bridge to bring him lunch while he worked. To keep his soup from getting cold along the journey, the wife added a layer of oil at the top to insulate it, and carried other ingredients such as rice noodles, thinly sliced meats, and tofu skin separately so they wouldn’t get soggy. She would assemble everything upon arrival, and as the soup was steaming hot and the meats were so thinly sliced, everything cooked immediately in the soup. The story was passed on by word of mouth over time and has come to symbolize affection, endearment, and admiration.
